I’ll be trying out a selection of chilli based recipes and bringing you the results and techniques for you to try yourself. The site will be updated as I find and cook my own homemade chilli meals.
You will be able to find; chilli con carne, chilli burgers, hot and spicy chilli meatballs and well as some popular vegetarian chilli recipes too. But lets get started with a home made chilli con carne I cooked as my first chilli recipe at home.
Chilli Con Carne Recipe
A very popular Mexican dish containing cubed stewing steak, red kidney beans and onion. Garlic, cumin and chillies can all be added in different quantities to suite your taste. Many people cook this with minced beef on the hob which does save a lot of cooking time.
Ingredients:
- 750g braising or stewing steak, cubed.
- 2x tbsp oil
- 1x large onion
- Garlic: 2 to 4 cloves
- 400ml of tomato juice
- 1 tin of chopped tomatoes
- 1 tin of red kidney beans
- 1tsp ground cumin
- 1/2 tsp dried oregano
Method
- Stir fry the beef in a large pan to seal it. (then remove from pan)
- Fry the chopped onions and garlic for a few minutes till golden
- Add tomatoes and tomato juice and bring to the boil
- Add the beef, cumin, chilli, and seasoning
Transfer the contents of the large frying pan to a casserole dish and place in a pre-heated oven at gas mark 3 - 160'C / 325'F
- Cook in the oven for 1.5 hours or until the meat is almost tender.
- Stir in the kidney beans and oregano. Return to the oven.
Cook for a further 45 minutes until the meat is tender.
Serving Suggestion
Serve your Chilli Con Carne with boiled rice [perhaps tilda] and tortillas. Sprinkle a bit of optional chopped fresh herbs to garnish.
